Sometimes you have to break a few eggs...

There are few things in this world that are less rewarding than the effort put into them.  Being a dishwasher in a professional kitchen is probably one of them.  Much like the post office, the product just keeps coming down the line and doesn't stop.  It is the most important job in the kitchen, but the most work and least pay.  They clean all the dishes, pots, pans and utensils, as well as put stock away.  You can go from the heat of the dishroom to the chill of the freezer, a minimum of 80* temperature swing, at a moments notice.  It is hot, wet, difficult job, especially in our world.  We have one person who does our dishes, pots, et al, cuts fresh fruit and makes pizza, every day.  I've been there.  I had to fill in the last month of last school year because of circumstances which are better not delving into here.  I did the dishwasher's job, as well as my own, I know first hand how not fun it is.

I have softened my political views over time because having a political view that isn't the norm in a school, has been...well, let's just say it has been.  Though I should toe the party line, I am very much against a strict border policy.  The policy hasn't worked yet, there is no way to make it work, short of having the type of check points that you saw going between East and West Germany.  Do we really want a version of the Berlin Wall around our country?  Really?  Our ancestors came here to make a better life, most of them were not "legal" in the way they did it...get my point?  Besides, how many average white people do you see mowing lawns, running a dish machine or let's face it, cooking your meal at a restaurant?  Not many.  The whole restaurant industry is basically an Underground Railroad for the illegal immigrant.  They get their jobs through word of mouth, mostly from other illegals, who they share housing with. They have fake Social Security numbers, while the numbers may be falsified, the money deducted from the paychecks, still go to the Social Security system.  You just won't have someone with that name cashing out.  Is it that bad of a deal?  Especially when the antiquated Social Security system is in such shambles?  But that is a rant for another day.  Our corporation is currently using the Safe I-9 background check system.  Basically, it takes someone's information and runs it through all the credit bureaus, FBI and Department of Homeland Security, to make sure they are allowed to be hired for a $9.75 per hour position. The low, low cost of the check is $200 per applicant.  So, before you even hire someone you are spending money on them.  What this has done in our account is make it almost impossible to hire someone to be our dishwasher.  Anyone who is legal, wants too much money or has been fired from some place else.  Since starting school in August, we have now started our third dishwasher.  The first one quit within two days, though they washed dishes in a restaurant.  The second was just fired, because they brought the attitude which got them released from their previous job, here.  You can't be slow and lazy in our line of work.  Having to fire someone is never easy, never gets easier, you just find better ways to cope with doing it.  We will see how our new, new dishwasher does.  They are legal, I'm trying to hold out hope.
